Whether you eat a vegan diet on moral, environmental or health grounds, you’ll have noticed that it often gets a lot of stick for being boring! But this doesn't have to be the case! In fact, there are lots of ways to have delicious and interesting food on this diet. Read on to find out what they are.
Breakfast
With milk and eggs being such a large part of the traditional breakfast menu, it can seem like the options are pretty limited for vegans. But in fact, there are a lot of delicious items that can be cooked for a nutritious and delicious breakfast.
Take French Toast as an example. It's Impossible to have this because of the eggs right? Wrong. Try mashing banana into some almond milk to get a similar consistency. Then dip the bread in the mixture before cooking, and season with vanilla and cinnamon.
Or why not give scrambled tofu a go in the place of eggs? Use the firmer tofu as this will give you the best egg like consistency. Just crumble it into a pan and heat through. Then you can serve with tomatoes or avocados on some farmhouse bread. Yum.
Lunch
There are plenty of interesting vegan choices for lunch as well. The Buddha bowl is a popular choice at the moment. This is a bowl filled with a mix of nutritious items that you can eat piece by piece or all together. It's called a buddha bowl because Buddha and Buddhist monks ask for food donations instead of providing the food themselves. This means as they travel they can be given all sorts of different foods in the same bowl to eat.
Another popular lunch choice is Asian inspired food. Salt and pepper Tofu served with stir fried noodles and veg is delicious. Or how about some simple pasta with a sauce that has a base of avocado instead of cream or cheese?
Dinner
Dinner is arguably the most important meal of the day, and there are plenty of meals that can be cooked to meet vegan requirements, like this one. Also try chili and rice. It is a delicious meal without the meat. You can always add in soya protein for texture too.
Baking
Something that many vegans find frustrating is that they have to miss out on baked goods. This is because a lot of baking requires butter and eggs. Also, a lot of filling for cakes and pies include cream, chocolate or butter as well.
Some people choose to bake their own vegan food but find that they have to experiment a lot before they can adapt their favorite recipes. Others attend a vegan baking school to get on the fast track to making sweet and savory bakes.
Cheese
Lastly one of the hardest things for a vegan is the lack of cheese. In all honesty I may live without meat but I can't for the life of me imagine life without cheese. However, there are some vegan cheeses available now, but not every cheese is included or has the right texture. Something that can help can make nacho style cheese dip. Just combine cooked vegetables, oil and yeast flakes as in this recipe here.
